Making Air Fryer Chickpeas

  1. Spread the drained chickpeas on a clean tea towel and rub dry. Leave for 10 minutes. Heat the air fryer to 190°C / 375°F.

  2. Toss the chickpeas with the oil, paprika, cumin, garlic powder and salt.

  3. Cook for 15 minutes, shaking the basket every 5 minutes, until crisp and golden.

  4. Tip onto a plate and cool for 5 minutes; they firm up as they cool.

Why It Works

Dry chickpeas crunch and wet ones do not. After draining the tin, spread the chickpeas on a tea towel and rub them gently, then leave them to air-dry for 10 minutes. The loose skins come away, and what is left is dry enough to crisp.

Toss them in oil and spices after drying, not before. The oil coats the surface, and the spices stick to the oil. Cumin, smoked paprika and a little salt are a good start.

Cook at 190°C, shaking the basket every 5 minutes. The last few minutes decide the texture. They go from chewy to crunchy quickly, so check at 12 minutes if your machine runs hot.

They crisp further as they cool. Eat them within a day, since they soften as they absorb moisture from the air. Once cool, they are good scattered over soup or salad for crunch in place of croutons, and other spices such as chili powder or za'atar work in place of the cumin.
