Cooking Air Fryer Onion Rings

Separate the onion slices into rings. Mix the flour, paprika and half the salt on a plate. Put the eggs in a shallow bowl and the panko with the rest of the salt on another plate.

Dip each ring in the flour, then the egg, then press firmly into the panko.

Heat the air fryer to 190°C / 375°F. Brush the coated rings lightly with the oil.

Cook in single-layer batches for 10 minutes, turning once, until golden and crisp. Serve at once.
Why It Works
The coating is the whole job, and it has to be built in three layers: flour, egg, crumbs. The flour sticks to the wet onion, the egg sticks to the flour and the crumbs stick to the egg. Skip one and the coating slides off in the basket.
Cut the onions 1.5 cm thick, no thinner, and separate the rings. Very thin rings go limp and burn; thick ones hold their shape and stay sweet inside.
Use panko if you have it, which gives a lighter crunch than ordinary dried crumbs. Press the crumbs on firmly with your palm, then spray or brush lightly with oil, because the air fryer will not brown a dry crumb.
Cook in a single layer, in batches, for 10 minutes, turning once. If your machine runs hot, check at 7 minutes. Serve straight away; they soften as they sit. A dip of ketchup, barbecue sauce or a spoon of mayonnaise mixed with a little mustard suits them, and the cooked rings keep warm for a few minutes on a rack.
