  1. Soak the diced potatoes in cold water for 10 minutes. Drain and dry very thoroughly with a clean tea towel.

  2. Heat the air fryer to 200°C / 390°F. Toss the potatoes with the oil, paprika and garlic powder.

  3. Tip into the basket in one layer and cook for 20 minutes, shaking the basket every 5 minutes, until deep golden and tender.

  4. Toss with the salt and parsley and serve at once.

Worth Knowing

  • Dry the soaked potatoes completely, or they will not crisp.
  • Cook in two batches if your basket is small.
  • If a knife does not slide in easily at 20 minutes, give them 3 minutes more.
  • Add the salt after cooking.

Why the Method Is What It Is

The edges of a good air fryer potato are crisp and the middle is soft, and the way to get both is to soak the dice first. Ten minutes in cold water pulls out surface starch, which is what makes potatoes stick together and stay pale.

Dry them thoroughly afterwards. Wet potatoes steam in the basket and turn out soft. A tea towel and a minute of patting is all it takes.

Cut the pieces to 2 cm, all the same size, so they finish together. Shake the basket every 5 minutes. The corners brown first, and shaking moves the pale sides to the fan.

Salt at the end rather than before cooking, since salt on the raw surface draws out water and slows the crisping. Smoked paprika and garlic powder go on with the oil and handle the heat well. If your machine runs hot, check at 15 minutes. Because the potatoes are cut small they cook in the time it takes to grill a sausage or fry an egg, which makes them a useful side for a quick supper.
