-
Take the steaks out of the fridge 20 minutes before cooking. Heat the air fryer to 200°C / 390°F for 3 minutes.
-
Pat the steaks dry, rub with the oil and season with the salt and pepper.
-
Lay them in the basket with space between and cook for 4 minutes. Turn and cook for 4 minutes more for medium.
-
Lift onto a plate, top with the butter, cover with foil and rest for 5 minutes before slicing.
Keep an Eye on These
- Let the steaks come up to room temperature before cooking.
- Pat the surface dry so it browns rather than steams.
- If the steaks are thinner than 2.5 cm, check at 6 minutes.
- A thermometer gives a far more reliable result than timing alone.
Good to Know About Air Fryer Steak
A steak needs fierce heat and a short time, and the air fryer supplies both. The fan blasts the surface, which browns quickly, while the middle stays pink.
Take the steaks out of the fridge for 20 minutes first. A steak that goes in ice cold takes longer to cook through and browns less well. Pat them dry with kitchen paper and season generously with salt and pepper; a wet surface steams.
The cook time depends on thickness. For steaks about 2.5 cm thick, 8 minutes at 200°C, turning once, gives medium. Rest the meat for 5 minutes under foil. The juices settle back into the fibres, and a steak cut straight away bleeds onto the board.
If your machine runs hot, check at 6 minutes. A meat thermometer reads 54°C for medium rare and 60°C for medium. Season more than seems necessary, since a thick steak needs plenty of salt on the surface, and spoon any juices from the plate over the slices.
