Two things go into almond butter: almonds and patience. Nothing else is needed, and the food processor does the work as long as you give it time.

Roast the nuts first for 10 minutes at 180°C. Warm nuts release their oil more easily, and the roasting adds a deeper, toasted flavour. Cool them for 5 minutes before blending, as they should be warm, not hot.

The processor goes through stages. First a coarse meal, then a thick clump, then a crumbly paste, and finally, after about 15 minutes, a smooth, pourable butter. Stop to scrape down the sides every few minutes.

If your machine runs hot, pause for a minute now and then. Add the salt at the end. It thickens in the fridge, so stir before use. Different machines take different times, so judge by texture rather than the clock, and be patient with the stage that looks like dry crumbs.
