Put the amaretto, lemon juice, sugar syrup and egg white, if using, in a cocktail shaker and shake hard for 10 seconds without ice, to make the foam.

Add a handful of ice and shake hard for 12 seconds, until the outside of the shaker is frosted.

Strain into a rocks glass filled with fresh ice.
