Making Apple Cinnamon Egg White Pancakes

  1. Whisk the egg whites in a clean, dry bowl until they hold a soft peak.

  2. In a second bowl, mix the flour, milk, apple, cinnamon and vanilla until just combined. Fold in a third of the whites, then fold in the rest.

  3. Heat a non-stick frying pan over medium-low heat and brush with a little of the oil. Spoon in the batter to make rounds about 10 cm across.

  4. Cook for 2 to 3 minutes a side, until golden and cooked through. Repeat with the remaining oil and batter, making about 6 pancakes in all.

  5. Serve with the maple syrup.

Whip the whites separately. Fold them in last, because that one step is what makes these rise when there is no baking powder to do it. Baking powder carries a lot of sodium and usually phosphate too, so whipped whites do the lifting instead.

Beat the whites until they hold a soft peak, then fold them into the flour, milk and grated apple in two goes, gently and without stirring. Stirring knocks out the air and gives flat, rubbery rounds. Grated apple melts into the batter. It sweetens it, so the only added sugar is the spoonful of maple syrup at the end.

Cook on medium-low heat. Hot pans brown the outside before the middle sets. Turn each pancake only when the surface is dotted with bubbles and the edges look dry, which takes 2 to 3 minutes a side. Keep the first batch warm in a low oven while you cook the rest.

Storage and Reheating

Best eaten fresh. Cooked pancakes keep in the fridge for up to 2 days and reheat in a toaster.
