Apple Dumplings

Whole apples filled with cinnamon sugar and butter, wrapped in pastry and baked in a bubbling cinnamon syrup. Serve warm with cream or vanilla ice cream.

How to Make Apple Dumplings

  1. Heat the oven to 190°C / 375°F (170°C / 340°F fan). Grease a baking dish large enough to hold the dumplings in one layer.

  2. Peel the apples and remove the cores with an apple corer, leaving the base of each apple intact.

  3. Mix the 60 g of brown sugar, the 1.5 teaspoons of cinnamon, the softened butter and the raisins and pack the mixture into the hollows of the apples.

  4. Cut each pastry sheet into 3 squares, each large enough to enclose an apple. Set an apple in the middle of each square, brush the edges with beaten egg and bring the pastry up around the fruit, pressing the seams together to seal. Set the dumplings seam side down in the baking dish and brush them with egg.

  5. Put the 150 g of brown sugar, the water, 60 g of butter and 1 teaspoon of cinnamon in a small saucepan and simmer for 3 minutes, stirring, until the sugar has dissolved and the butter has melted.

  6. Pour the hot sauce around, not over, the dumplings. Bake for 40 to 45 minutes, basting once with the sauce, until the pastry is deep golden and a knife slides easily into the apples.

  7. Cool for 10 minutes and serve warm with the sauce spooned over and cream or ice cream.

  • Seal the pastry well. If the seams open, the filling leaks into the sauce and the pastry cooks unevenly.
  • Pour the sauce around the dumplings and not on top. It keeps the pastry crisp on top, and lets the base soak up the syrup.
