It looks like a full apple pie and eats like a snack. Apple pie bites are made in a mini muffin tin from rounds of ready-made pastry, which means you can have two dozen perfectly proportioned mouthfuls in less than an hour with no slicing or serving problems.

The filling is diced apple cooked briefly in butter, sugar and cinnamon until it just starts to soften, with a spoonful of cornflour to bind the juices. Cook it for 5 minutes only. The apples will finish in the oven, and a filling that is cooked down fully will turn to sauce and lose the bite of the fruit. Let it cool before it goes anywhere near the pastry.

Press the pastry into the tin, not too thin. Cut rounds slightly larger than the holes, ease them in, and press against the sides. Thin pastry tears under the weight of the filling. Fill each case almost to the top, because the apples shrink as they bake.

Top with a small round or a few strips of pastry in a lattice, brush with egg and sprinkle with sugar. Bake until deep gold. Run a knife around the edge of each one while still warm, and lift out after 5 minutes.

  1. Heat the oven to 190°C / 375°F. Melt the butter in a pan, add the apples, brown sugar, cinnamon and lemon juice and cook for 5 minutes. Stir in the cornflour for 1 minute and cool.

  2. Roll out the pastry. Cut 12 rounds to line a 12-hole muffin tin and press them in. Cut the remaining pastry into thin strips.

  3. Fill each case with the apple mixture. Lay 2 strips over each in a cross.

  4. Brush the pastry with the egg and sprinkle with the caster sugar.

  5. Bake for 15 minutes until golden. Cool in the tin for 5 minutes, run a knife around each and lift out.
