Heat the oven to 200°C / 390°F. Line a pie dish with half the pastry. Toss the apples with the sugar, cinnamon and flour and pile into the dish.

Cover with the rest of the pastry, crimp the edges, cut steam vents and brush with the milk. Cook for 50 minutes until golden.

Heat the custard milk until steaming. Whisk the yolks and custard sugar, pour in the milk slowly, return to the pan and stir over low heat for 8 minutes until thick. Add the vanilla.
