Put the apples, water and 1 tablespoon of the sugar in a saucepan.

Cover and cook over medium-low heat for 15 to 20 minutes, stirring now and then, until the apples have collapsed into a pulp.

Beat with a wooden spoon for a rough sauce, or blend for a smooth one.

Stir in the lemon juice and cinnamon if using, and taste. Add more sugar only if it is too sharp.
