Cooking Baked Haddock with Herbs

  1. Heat the oven to 200°C / 390°F (180°C / 355°F fan). Lay the haddock in a baking dish.

  2. Mix the oil, lemon juice, parsley, dill, chives, garlic and pepper in a small bowl.

  3. Spoon the herb mixture thickly over the fish.

  4. Bake for 15 minutes, until the fish flakes easily and is opaque in the centre. Rest for 2 minutes and spoon over the pan juices.

Cook it in a hot oven, briefly. Haddock is lean, so it needs 15 minutes at most and a cover of herbs and oil to keep the surface from drying. Leave it in longer, and it turns chalky and falls into dry flakes.

A mixture of parsley, dill, chives, garlic and lemon juice does the seasoning. Spoon it over the fish thickly. Bake in a single layer so that each fillet is surrounded by hot air. The herbs form a fragrant crust, and olive oil keeps the surface moist. Choose a dish that holds the fillets snugly, with a little space between them.

Haddock has a firm white flesh that flakes into large pieces. It is lower in potassium than cod, though not by much. Serve with rice and carrot batons. Spoon the pan juices over the top. Leftovers are good cold in a salad. Choose fillets of an even thickness for even cooking.
