  1. Heat the oven to 200°C / 390°F (180°C / 355°F fan). Toss the tomatoes, onion, garlic, half the oil, the oregano and half the salt in a baking dish and roast for 8 minutes, until the tomatoes begin to burst.

  2. Season the tilapia with the remaining salt and the pepper and lay it on top of the tomatoes. Drizzle with the remaining oil and the lemon juice.

  3. Bake for 10 minutes, until the fish is opaque and flakes easily. Scatter with the basil and spoon the tomatoes over the fish.

Check tilapia early. The fillets are thin, so they cook through quickly and go from moist to dry in a few minutes. Fold the thin tail end under so the whole fillet is an even thickness, and take the dish out of the oven as soon as the flesh turns opaque.

The tomatoes make the sauce. Bake the fish on the tomatoes: the fillets go on top of a bed of cherry tomatoes, red onion, garlic and olive oil, so as the tomatoes burst their juices flavour the fish and keep it moist from below. Oregano and lemon add a bright, savoury note. A little salt is all the seasoning needed.

Serve with the tomato juices spooned over the fish. Basil at the end adds freshness. The dish keeps for 2 days in the fridge, and the fish flakes into a good lunch salad. Spoon it over cauliflower rice. A little lemon at the end brightens the fish.
