Making Banana Oat Breakfast Cookies

  1. Heat the oven to 180°C / 355°F (160°C / 320°F fan) and line a baking tray with parchment paper.

  2. Mash the bananas in a large bowl until almost smooth. Stir in the peanut butter and vanilla, then the oats, raisins, walnuts, cinnamon, baking powder and salt. Leave the dough to rest for 5 minutes.

  3. Scoop 12 mounds, about 2 tbsp each, onto the tray and press each flat with a fork to about 1.5 cm thick.

  4. Bake for 15 minutes, until the edges are golden and the cookies feel set. Cool on the tray for 5 minutes.

Why the Method Works

Banana cookies go wrong in two ways: they spread into flat discs, or they stay damp and stodgy. The fix is ripeness and oats. A very ripe banana supplies the sweetness and the binding, so the cookies need no sugar, butter or egg, and the oats give them structure.

Mash the banana until it is almost a purée, then stir in the oats, peanut butter and cinnamon. Rest the dough for 5 minutes so the oats soak up some of the moisture and the mixture firms up. The cookies do not spread in the oven. Shape each one as you want it to look when baked, pressing it flat with a fork or the back of a spoon, since a mound will stay a mound.

They are soft, not crisp. Two cookies make a serving, with a cup of tea or a glass of milk. Keep them in a tin and eat them within 3 days.
