  1. Peel the bananas, halve them lengthways and then across.

  2. Melt the butter in a wide frying pan over medium heat. Stir in the brown sugar and cinnamon and cook for 2 minutes, until smooth and bubbling.

  3. Add the bananas and cook for 1 to 2 minutes per side, until just soft and glazed.

  4. Take the pan off the heat, turn off any extractor fan and pour the rum around the edge. Return the pan to the heat and tilt it to catch the flame or light the sauce with a long match. Shake the pan gently for about 30 seconds until the flames die down.

  5. Spoon the bananas and sauce over the scoops of ice cream and serve immediately.
