-
Whisk the ketchup, vinegar, sugar, treacle, Worcestershire sauce, mustard, paprika, garlic powder, onion powder, pepper, salt, cayenne and water together in a medium saucepan.
-
Bring to a gentle boil over medium heat, stirring, then reduce the heat to low.
-
Simmer for 15 to 20 minutes, stirring often, until the sauce is thick enough to coat the back of a spoon and has darkened slightly.
-
Stir in the liquid smoke, if using, and taste. Add a little more sugar if it is too sharp or vinegar if it is too sweet.
-
Let it cool a little, then pour it into a clean jar or bottle.
Tips for Making BBQ Sauce
- Simmer on low heat and stir often. The sugar in the sauce catches easily on the base of the pan, and it spits as it thickens.
- Brush it on ribs and chicken only in the last 10 minutes of cooking. The sugar burns over a long time on the grill.
- Adjust the balance to your taste at the end. Sweetness, tang and heat all shift a little as it reduces.
What to Serve with BBQ Sauce
- Grilled ribs
- Pulled pork sandwiches
- Grilled chicken
