  1. Warm the milk with the bay leaf and nutmeg until steaming. Do not boil.

  2. Melt the butter in a pan over a medium heat, stir in the flour and cook for 1 minute.

  3. Add the warm milk a ladle at a time, whisking until smooth after each.

  4. Simmer for 8 minutes, stirring, until it coats a spoon.

  5. Remove the bay leaf and season with the salt and pepper.

Why It Works

Bechamel is one of the foundation sauces of French cooking, and it is also the white sauce on a lasagne and in a cauliflower cheese. It is made from three things, and its only difficulty is lumps.

Warm the milk with the bay leaf and nutmeg until it is steaming but not boiling. Melt the butter in a separate pan, stir in the flour and cook for 1 minute, until it looks like wet sand and smells slightly nutty. Add the warm milk a ladle at a time, whisking after each, until each is fully absorbed. Warm the milk first. Cold milk poured onto a hot roux is the usual cause of lumps.

Simmer for 8 minutes, stirring, until the sauce coats the back of a spoon. It should be thick enough to hold a line drawn through it with a finger.

Season with salt and white pepper. If lumps do form, whisk hard or pass it through a sieve.

After You've Cooked It

Keeps in the fridge for 3 days with cling film pressed onto the surface. Reheat gently with a splash of milk.
