Cooking Berry Crumble

  1. Heat the oven to 190°C / 375°F (170°C / 340°F fan). Toss the frozen berries with the sugar and cornflour in a 2 litre baking dish.

  2. Rub the butter into the flour until crumbly. Stir in the oats and brown sugar.

  3. Scatter the topping loosely over the berries.

  4. Bake for 35 minutes until golden and bubbling. Rest for 10 minutes.

Why the Method Works

Frozen berries are cheaper than fresh and just as good in a crumble. They go in straight from the freezer, because thawing makes them bleed and collapse before they reach the oven.

Berries give off a lot of juice, so they need something to hold it: cornflour, tossed through the frozen fruit with the sugar. Skip it and the crumble swims.

The topping is flour, butter, oats and brown sugar rubbed together until clumpy. Leave it rough. Pressed down or finely rubbed, it bakes hard and flat; left loose it crisps into lumps.

Bake a little longer than a fresh-fruit crumble, since the berries start cold. The signs it is ready are juice bubbling at the edges and a deep golden top. Let it stand for 10 minutes so the juices thicken. Frozen berries are available all year, and a crumble made with them tastes of summer in winter. Serve with custard or cream, since the berries are tart and the topping is sweet and rich.
