  1. Heat the oven to 220°C / 430°F (200°C / 390°F fan). Brush the base with half the oil, set on a tray and bake for 4 minutes.

  2. Fry the sausage meat in a pan for 5 minutes, breaking it up. Lift out. Whisk the eggs with the salt and scramble in the same pan for 2 minutes, keeping them soft.

  3. Scatter the sausage, egg and pepper over the base and cover with the cheese.

  4. Bake for 8 minutes until the cheese is bubbling. Scatter with the spring onions and cut into 8 slices.
