A khaki soup is an overcooked soup. Broccoli and spinach lose their colour with every minute on the heat, so this recipe cooks the broccoli only until tender and adds the spinach right at the end, for less than a minute, before blending. A little potato gives body without cream.
Chop the broccoli stems small and cook them with the florets; they taste sweet once the tough skin is peeled and they soften in the same time. Blend it straight away, in batches, with the lid ajar and a cloth over it so the steam can escape. A stick blender makes it easier. Taste, then add lemon juice and a grating of nutmeg. Add the nutmeg sparingly.
The only starch is a little potato. Reheat gently and avoid boiling, which dulls the colour. It keeps for 3 days in the fridge, and it freezes well too. Serve with a squeeze of lemon and a drizzle of olive oil.

Heat the oil in a large pot over medium heat. Cook the onion for 4 minutes, until soft. Add the garlic and cook for 30 seconds.
