The Method for Bruschetta Chicken

  1. Heat the oven to 200°C / 390°F (180°C / 355°F fan). Mix the tomatoes, garlic, basil, balsamic vinegar and 1 tbsp of the oil with a pinch of the salt and leave to stand while you cook the chicken.

  2. Season the chicken with the remaining salt and the pepper. Heat the remaining oil in a large ovenproof frying pan over medium-high heat and cook the cutlets for 3 minutes on each side, until golden.

  3. Spoon the tomato mixture over the chicken and scatter the mozzarella on top. Bake for 12 minutes, until the chicken is cooked through and the cheese has melted.

  4. Rest for 3 minutes and serve with the juices from the pan.

Things to Watch For

  1. Slice the breasts into even cutlets, or pound them lightly, so they cook through in the time it takes the cheese to melt.
  2. If your tomatoes are watery, scoop out the seeds before dicing.
  3. Add the basil after baking rather than before; it keeps its colour.

Swaps and Variations

  • An eighth of a teaspoon of garlic powder per clove is the usual stand-in when you are out of fresh garlic — it will not caramelise the same way, but it carries the flavour.

The Short Version

Make this when tomatoes are at their best, in the warm months. There is nothing to hide behind. The topping is raw tomato, garlic, basil and a splash of balsamic, spooned over seared chicken and melted under mozzarella, so it tastes like bruschetta minus the toast. Out of season, use cherry tomatoes, which hold their flavour better.

Dice the tomatoes small and let them stand with the garlic and vinegar while the chicken sears; the salt draws out juice that becomes the sauce. Drain off excess liquid if the bowl looks watery, or the chicken will boil under its topping rather than roast. Sear first for colour. Twelve minutes in the oven then finishes the cutlets and melts the cheese.

Basil is best torn at the last moment. A spoonful of the roasting juices over each portion is the sauce. Serve with a green salad or roasted green beans. Leftover cutlets slice well into a salad for lunch the next day.
