Café de Olla
Coffee simmered in a clay pot with cinnamon and piloncillo, the way it is made over a fire — sweet, spiced and never passed through a filter.

Method

Put the water, piloncillo, cinnamon, cloves, orange peel and salt in a clay olla or a heavy pan.

Bring to a simmer and cook 8 minutes, stirring until the piloncillo has completely dissolved.

Take the pan off the heat entirely.

Stir in the coffee grounds, cover, and steep 5 minutes.

Strain through a fine sieve or a cloth into cups.

Serve immediately, in clay jarritos if you have them.
