Grate the cauliflower on the coarse side of a box grater, or pulse it in a food processor until it looks like rice. Steam it for 4 minutes, then spread it on a plate to cool.

Tip the cooled cauliflower into a clean tea towel and wring out as much liquid as you can, twice.

Mix the cauliflower with the eggs, Parmesan, almond flour, garlic powder, onion powder, salt and pepper. Shape into eight flat patties about 1.5 cm thick.
