Heat the oven to 220°C / 430°F (200°C / 390°F fan). Mix the flour, baking powder, salt, mustard powder and cayenne. Rub in the butter until crumbly.

Stir in 120 g of the cheese, then the milk, until just combined.

Pat out on a floured surface to 3 cm thick and cut 8 rounds with a 6 cm cutter, pressing straight down.

Stand them close together on a lined tray, scatter with the remaining cheese and bake for 15 minutes until golden.
