No yeast means no wait. Self-raising flour and yogurt make a soft dough in a few minutes, which can be shaped, topped and baked in under half an hour.

The yogurt supplies acid and fat, and the dough stays tender. Add it all at once and stir with a spoon until it clumps, then bring it together with your hands. Stop when it is no longer sticky: more kneading toughens it.

Roll it into a rectangle about 1.5 cm thick and cut it into 8 strips with a floured knife. Twist each one gently and lay them on the tray.

Garlic butter goes on before the cheese, so the cheese sticks. Bake until the sticks are golden and the cheese has crusted at the edges. Serve them warm, with a dip. These are a handy side for soup or pasta when there is no bread in the house. The dough takes only a few minutes to make, and garlic butter and cheese give a flavour out of proportion to the effort.

  1. Heat the oven to 220°C / 430°F (200°C / 390°F fan). Mix the flour and salt, add the yogurt and stir until it clumps. Knead briefly on a floured surface until smooth.

  2. Roll to a 20 x 24 cm rectangle, about 1.5 cm thick. Cut into 8 strips and twist each gently. Lay on a lined tray.

  3. Mix the butter, garlic and oregano and brush over the sticks. Scatter with the cheese.

  4. Bake for 15 minutes until golden and the cheese is crusted.

  • No self-raising flour to hand? Use the same weight of plain flour plus 2 teaspoons of baking powder per 150 g.
  • An eighth of a teaspoon of garlic powder per clove is the usual stand-in when you are out of fresh garlic — it will not caramelise the same way, but it carries the flavour.
  • Fresh herbs work in place of the dried oregano at roughly three times the quantity — a teaspoon of dried is about a tablespoon of fresh, chopped.
