Making Chicken and Chorizo Pie

  1. Heat the oven to 200°C / 390°F. Fry the chorizo in a dry pan for 4 minutes and lift out. Brown the chicken in the oil for 6 minutes and remove.

  2. Soften the onion and pepper for 5 minutes. Stir in the flour for 1 minute, then add the milk and stock and simmer for 8 minutes.

  3. Return the chorizo and chicken with the paprika and salt. Cool for 15 minutes and spoon into a pie dish.

  4. Cover with the pastry, brush with the egg, cut a slit and cook for 35 minutes until golden.

What's Going On Here

Chorizo changes a chicken pie by making the sauce red, smoky and rich. The sausage gives up its fat as it fries, and everything else in the pot cooks in it.

Fry the chorizo in a dry pan for 4 minutes until it has released its orange oil, then lift it out. Brown the chicken in that oil, and soften the onion and pepper in the same pan. Cook the flour for a full minute before the liquid goes in, which stops the sauce tasting of raw flour.

Stir in the milk and stock and simmer for 8 minutes, until thickened. Add the paprika, chorizo and chicken, and taste. The sauce should be quite thick, since the pastry traps steam.

Cool the filling for 15 minutes, then spoon into a pie dish, top with puff pastry, brush with egg and cut a slit. Cook at 200°C for 35 minutes. If your oven runs hot, check at 28 minutes. The pastry should be risen and deep gold.
