Heat the oven to 190°C / 375°F (170°C / 340°F fan).

Mix the rice, stock, water, onion, carrot, peas, garlic, thyme, paprika, oil and pepper in a 23 by 33 cm baking dish. Lay the chicken pieces on top.

Cover tightly with foil and bake for 40 minutes, until the rice is tender and the chicken reaches 74°C.

Uncover and bake for 5 minutes more. Rest for 5 minutes, then fluff the rice and stir through the parsley.
