Put the carcass, the halved onion, halved carrot, halved celery stick, bay leaves and water in a large pot. Bring to a boil, then lower to a gentle simmer.

Simmer, partly covered, for 1 hour, skimming off any foam in the first 10 minutes.

Strain the stock into a clean pot. Pick the meat from the bones and add it back, discarding the bones and vegetables.

Add the diced onion, carrots and celery, the salt and the pepper and simmer for 15 minutes. Add the noodles and cook for 6 minutes, then stir in the parsley.
What's Going On Here
The smell of simmering chicken bones is the first sign the stock is working: savoury, a little sweet, and clean. It should barely tremble, with just a few bubbles breaking the surface.
A hard boil makes the stock cloudy and greasy. Lower the heat as soon as it comes up and let it tick along for an hour.
Start with the carcass and any leftover skin and juices, plus an onion, a carrot and a celery stick. Cold water, not hot, covers the bones, because slowly heating it draws more out of them.
Strain, pick off the meat, and cook the noodles directly in the finished soup. The starch thickens it slightly and nothing is wasted. The soup is as good as the roast chicken it came from, and a well-seasoned bird makes a better stock. Cooled stock chilled overnight sets a layer of fat on top, which lifts off in one piece.
