Rinse the rice under cold water until the water runs nearly clear.

Put the rice, water and ginger in a large pot and bring to the boil. Lower the heat to a gentle simmer, stirring now and then.

After 20 minutes add the chicken. Simmer for 40 minutes more, until the rice has broken down into a thick porridge and the chicken is cooked through.

Lift out the chicken and shred it with two forks. Stir it back into the congee with the white pepper and half the spring onions. Serve topped with the sesame oil and the remaining spring onions.

Use a big pot, with 2 litres of water for 120 g of rice. Stir now and then. The rice would otherwise stick to the base. Congee thickens as it cools, so keep a kettle of hot water to loosen it. Remove the chicken when it is cooked through and shred it with two forks.
Plain congee is a canvas. Ginger, spring onions, white pepper and a few drops of sesame oil are all it gets here, and there is no salt. White rice is lower in potassium and phosphorus than brown rice or oats, so a bowl suits a careful plate.

- Out of spring onions? A small regular onion, finely sliced, or a few chives stirred in at the end both cover the job.
