  1. Melt the butter with the oil in a large pot over medium heat, add the onion, carrots and celery, and cook for 8 minutes, until soft. Add the garlic and cook for 1 minute.

  2. Stir in the flour and Italian seasoning and cook for 1 minute.

  3. Pour in the stock and milk a little at a time, stirring, and simmer for 8 minutes, until the vegetables are tender and the soup has thickened slightly.
