Making Chicken Kofta

  1. Squeeze the grated onion in a clean cloth. Mix it with the chicken, parsley, mint, garlic, cumin, coriander, cinnamon, paprika, half the oil, 1 tablespoon of the lemon juice and half the pepper. Chill for 10 minutes.

  2. Wet your hands and shape the mixture into 12 ovals about 7 cm long.

  3. Heat a grill pan over medium-high heat and brush it with the remaining oil. Cook the kofta for 12 minutes, turning every 3 minutes, until browned and the centres reach 74°C / 165°F.

  4. Toss the cucumber with the torn mint, the remaining lemon juice and pepper. Serve the kofta with the salad.

Why the Method Works

A dish for a table of four, with something to do with your hands. The mixture is shaped into twelve small ovals, cooked on a hot grill pan and eaten with a cool cucumber and mint salad. It doubles easily.

Chicken mince is mild, so the flavour comes from cumin, coriander, cinnamon and paprika, with parsley, mint and garlic for freshness. Cumin and coriander wake up further in the heat of the pan. Grate the onion, then squeeze out the juice in a clean cloth, because a wet mixture will not hold a shape. Chill the mixture for 10 minutes before shaping. Wet your hands.

Serve the kofta with the salad, and rice if you like. Cucumber, mint and lemon juice make a cooling side that needs no salt. Spices are used generously here, because there is no salt to lean on. Cook a small test piece first. The cucumber salad can be mixed while the kofta cook.
