How to Cook Chicken Mornay

  1. Heat the oven to 200°C / 390°F (180°C / 355°F fan). Cook the chicken in the oil for 5 minutes until just coloured. Blanch the broccoli in boiling water for 2 minutes and drain.

  2. Melt the butter in a saucepan, stir in the flour and cook for 1 minute. Add the milk gradually, whisking, and simmer for 3 minutes.

  3. Take off the heat, stir in 100 g of the cheese, the mustard and salt until smooth.

  4. Mix the chicken and broccoli into a 2 litre baking dish, pour over the sauce and scatter with the crumbs and remaining cheese.

  5. Bake for 25 minutes until bubbling and golden. Rest for 5 minutes.
