  1. Slice each chicken breast in half horizontally, pound to 1 cm and season with the salt.

  2. Coat in the flour, then the egg, then the breadcrumbs mixed with the parmesan and oregano.

  3. Fry in the oil for 3 minutes per side until golden. Heat the grill and toast the split rolls.

  4. Fill the rolls with a spoon of marinara, a cutlet, more marinara and the mozzarella. Grill for 3 minutes until melted.

Slice the chicken breasts in half horizontally, then pound them to 1 cm. Thin cutlets cook through in the time the crumb takes to colour. Coat in flour, egg and seasoned breadcrumbs, pressing firmly.

Fry in a shallow layer of oil for 3 minutes a side, until golden. Do not cover the cutlet with sauce until the last moment, since the crumb softens quickly once it is wet.
