Heat the oven to 200°C / 400°F (180°C / 355°F fan). Bring a large pan of salted water to the boil and cook the penne for 7 minutes, which is about 3 minutes less than the packet says. Drain.

Meanwhile, heat the oil in a large frying pan over medium-high heat and cook the chicken for 5 minutes, turning, until lightly browned all over. Lift it onto a plate.

Add the onion and pepper to the pan and cook for 6 minutes until softened. Stir in the garlic and tomato purée and cook for 1 minute.

Pour in the passata, add the herbs, salt and pepper and simmer for 8 minutes until slightly thickened.

Turn the heat to low, stir in the cream cheese until it melts into the sauce, then return the chicken to the pan.

Tip in the drained pasta and stir to coat, then pour everything into a 30 x 20 cm ovenproof dish.

Scatter the mozzarella and cheddar over the top and bake for 20 minutes until the cheese is bubbling and golden at the edges.

Let it stand for 5 minutes, then scatter with basil and serve.
