-
Put the salt, paprika, chicken stock powder, garlic powder, onion powder, celery salt, turmeric and white pepper in a small bowl.
-
Stir well and grind with the back of a spoon, or pulse briefly in a spice grinder, until fine and evenly coloured.
-
Spoon into a clean, dry jar with a shaker lid.
-
Shake over hot chips as soon as they come out of the fryer.
Chef’s Tips
- Grind the mixture fine. Coarse salt bounces off chips instead of sticking to them.
- Salt chips the moment they come out of the fryer, while the surface is still hot and slightly oily.
- Taste a pinch on a chip and adjust. Chicken stock powder varies a lot in saltiness.
Common Substitutions & Variations
- Vegetable stock in place of the chicken stock makes this meat-free without changing the method, if that is what you need.
Pairing Suggestions
- Hot chips
- Roast potatoes
- Potato scallops
Storage & Reheating
Keep in a dry, airtight jar in the cupboard up to 6 months. Shake before use.
