Heat the oven to 200°C / 400°F (180°C / 355°F fan). Pat the chicken dry and season it with the salt and pepper.

Heat the oil in a large, ovenproof frying pan or shallow casserole over medium-high heat. Brown the chicken skin side down for 8 minutes, turn and brown for 3 minutes, then lift onto a plate. Add the sausage pieces, brown them for 5 minutes and lift them out too.

Cook the onion in the fat left in the pan for 4 minutes, until soft. Add the garlic and rosemary and cook for 1 minute.

Pour in the wine, scrape up the browned bits and let it bubble for 2 minutes. Add the stock, cherry peppers, brine and potatoes and bring to a simmer.

Return the chicken, skin side up, and the sausage to the pan, and roast uncovered for 40 minutes, until the chicken skin is deep golden, the potatoes are tender and the juices run clear.

Rest for 5 minutes, scatter with the parsley and serve straight from the pan.
