Can you put curry on a pizza and have it work? Yes, as long as the chicken is cooked first and the sauce is not too wet. Wet toppings are the usual reason a pizza goes soggy in the middle.
Fry the diced chicken with the tikka paste in a hot pan for 6 minutes until it is cooked through and the paste has dried onto the meat. Mix the tomato purée with a spoonful of the paste for the sauce base, and spread it thin. Keep the topping dry. A puddle of sauce under the cheese is what causes a soggy centre.
Bake the bases alone for 4 minutes at 220°C / 430°F, add the sauce, chicken, onion, peppers and mozzarella, and bake for 10 to 11 minutes more until the cheese is spotted gold. If your oven runs hot, check at 8 minutes.
Finish with fresh coriander and a drizzle of mint yoghurt.
