  1. Put the cucumber, yogurt, garlic, dill, mint, lemon juice, olive oil, water, salt and pepper in a blender.

  2. Blend until completely smooth, then taste and adjust the salt and lemon.

  3. Pour into a bowl or jug, cover and chill for 30 minutes.

  4. Stir, then pour into small bowls or glasses and finish with a few dill fronds.

Things to Watch For

  1. Use thin-skinned cucumbers if you can; they have fewer seeds and less bitterness.
  2. If the soup is too thick, thin it with a splash of cold water.
  3. Add a few ice cubes to the blender for a colder soup straight away.

Changing the Recipe

  • An eighth of a teaspoon of garlic powder per clove is the usual stand-in when you are out of fresh garlic — it will not caramelise the same way, but it carries the flavour.

About This Recipe

Peel the cucumbers and scoop out the seeds. That one step is the difference between a clean, sweet soup and a bitter, watery one. It takes a couple of minutes. A teaspoon does it neatly.

Blend everything with the water until completely smooth. Chill it for 30 minutes, so the flavours settle and it is properly cold. Cold mutes flavour. Taste the soup again once it is chilled and add salt or lemon if it needs it. Add a few ice cubes if you want it colder. Greek yogurt gives it body and tang, and dill and mint make it taste fresh rather than merely wet.

Serve it in small glasses as a starter, or in bowls with a drizzle of olive oil and a few dill fronds. It is best on the day it is made, though it keeps for 2 days in the fridge. Stir before serving. Garnish with a little extra mint.
