The Method for Chirashi Bowl

  1. Rinse the rice until the water runs clear. Simmer it covered in 300 ml water for 12 minutes, then rest covered for 10 minutes.

  2. Warm the vinegar, sugar and salt until dissolved, fold into the rice with a cutting motion and cool.

  3. Slice the fish across the grain into pieces 1 cm thick.

  4. Divide the rice between two bowls, top with the fish, cucumber and avocado, and add the pickled ginger, soy sauce, wasabi and sesame seeds.

About This Recipe

Chirashi means scattered, and the bowl is sushi without the rolling: seasoned rice with raw fish laid on top. It looks impressive and asks for no technique beyond slicing, but it does ask for good fish.

Buy sashimi-grade fish from a fishmonger who sells it for eating raw, and keep it cold until the last moment. Do not use fish that has not been sold for raw use. Cook the rice with care, then fold in the vinegar, sugar and salt while it is hot, using a cutting motion so the grains do not mash.

Cool the rice to just above room temperature. Hot rice cooks the fish; cold rice is hard.

Slice the fish across the grain in pieces about 1 cm thick, with a long, smooth stroke of a sharp knife. Fan them over the rice with the cucumber and avocado. Finish with pickled ginger, a little soy sauce and wasabi, and eat straight away.
