Halve the avocados, remove the stones and scoop the flesh into a blender or food processor.

Add the cocoa, almond milk, sweetener, vanilla and salt. Blend for 1 minute, stopping to scrape the sides twice, until the mousse is completely smooth.

The avocado has to be properly ripe. That is the only rule that matters here, because an underripe one leaves a grassy taste and a grainy texture that no amount of cocoa will hide.
Ripe avocado blends to cream. It brings the fat a mousse needs and almost no flavour of its own. Cocoa and a pinch of salt carry the chocolate, vanilla rounds it, and a few tablespoons of almond milk loosen the mixture until it falls from a spoon in ribbons. Scrape the blender down twice so no streaks of avocado survive. Taste before you sweeten, since a very ripe avocado is a little sweet already.
Spoon it into small glasses and chill for half an hour, which firms it up. Small glasses are plenty. Raspberries on top add tartness and a bit of fibre.
