How to Make Chocolate-Covered Strawberries

  1. Line a large tray with baking paper. Wash the strawberries gently, then dry them completely with kitchen paper and leave them on fresh paper until there is no moisture at all.

  2. Melt the dark chocolate with the oil in a heatproof bowl set over a pan of barely simmering water, making sure the bowl does not touch the water, and stir until smooth. Remove from the heat.

  3. Holding a strawberry by its stem, dip it into the chocolate to two-thirds of the way up, then lift it out and let the excess drip back into the bowl for a few seconds.

  4. Set the strawberry on the tray and repeat with the rest.

  5. Melt the white chocolate in the same way, transfer it to a small piping bag or a spoon and drizzle it in thin zigzags over the dark chocolate.

  6. Chill the tray for 15 minutes until the chocolate has set, then peel the strawberries off the paper.
