Method

  1. Butter and flour a 24 cm ring tin thoroughly, including the central funnel.

  2. Whisk the eggs and sugar 5 minutes, until pale, thick and tripled in volume.

  3. Whisk in the oil in a steady stream, then the milk, zest and vanilla.

  4. Sift the flour, baking powder and salt over the top and fold them in until just combined.

  5. Pour into the tin and bake at 160C fan / 180C / gas 4 for 50 minutes, until a skewer comes out clean.

  6. Cool 10 minutes in the tin, then turn out onto a rack.

  7. Dust with icing sugar once cool.
