How to Make Cinnamon Swirl Bread

  1. Mix the flour, yeast, caster sugar and salt in a large bowl, add the warm milk, egg and 60 g softened butter, and stir to a soft dough.

  2. Knead on a lightly floured surface for 10 minutes, until smooth and elastic. Put the dough in an oiled bowl, cover, and leave to rise for 1 hour, until doubled.

  3. Mix the brown sugar and cinnamon in a small bowl. Grease a 23 x 13 cm loaf tin and line it with baking paper.

  4. Roll the dough out on a floured surface to a rectangle 45 cm long and 23 cm wide. Spread it with the 30 g butter, leaving a 1 cm border, and sprinkle the cinnamon sugar evenly over the top.

  5. Roll the dough up tightly from a short end, pinch the seam closed, and set it seam side down in the tin.

  6. Cover the tin and leave the dough to rise for 45 minutes, until it is about 2 cm above the rim.

  7. Heat the oven to 175°C / 350°F, brush the top of the loaf with the milk, and bake for 40 minutes, covering with foil after 25 minutes if the top is browning too fast.

  8. Cool in the tin for 10 minutes, then turn out and cool on a wire rack for at least 30 minutes before slicing.

  • Roll the dough up as tightly as you can. A loose roll leaves air pockets and gaps in the swirl, and the loaf pulls apart when sliced.
  • Keep the filling off the last centimetre of dough. The sugar can leak out of the seam as it bakes, and a clean border seals better.
  • Cool the loaf before slicing. The crumb is still setting when it comes out, and a warm loaf squashes under the knife.
