Cinnamon Teacake

A plain butter cake, brushed with melted butter and rolled in cinnamon sugar while it is still hot. Best eaten warm, the day it is baked.

  1. Heat the oven to 180°C / 350°F and grease and line a 20 cm round cake tin.

  2. Beat the butter and sugar for 4 minutes, until pale and fluffy. Beat in the eggs one at a time, then the vanilla.

  3. Fold in the flour and milk in two batches, until just combined.

  4. Spoon into the tin, level the top and bake for 25 to 30 minutes, until golden and a skewer comes out clean.

  5. Mix the sugar and cinnamon in a small bowl.

  6. Turn the hot cake out onto a wire rack, brush all over with the melted butter and sprinkle with the cinnamon sugar, pressing it gently so it sticks.

  7. Cut into wedges and eat warm.
