Coconut Ice
Two layers of sweet, chewy coconut, one pink and one white, mixed from icing sugar and condensed milk with no cooking at all. Two hours of setting.
Method

Line a 20 cm square tin with parchment paper.

Mix the icing sugar, coconut, condensed milk and vanilla in a large bowl until a thick, stiff paste forms.

Divide the mixture in half. Press one half firmly and evenly into the tin.

Knead a few drops of the pink colouring into the other half until evenly coloured.

Press the pink half firmly over the white layer and smooth the top.

Chill for at least 2 hours until firm.

Lift out with the paper and cut into squares with a sharp knife.
