Heat the oven to 180°C / 355°F and line a 12-hole tin. Crush the biscuits in a bag into small chunks and set 80 g aside.

Beat the 175 g butter and caster sugar for 4 minutes until pale. Beat in the eggs one at a time.

Fold in the flour, 3 tbsp milk, vanilla and the other 80 g of biscuits.

Fill the cases two-thirds full and bake for 20 minutes until a skewer comes out clean. Cool completely.

Beat the 120 g butter with the icing sugar and 2 tbsp milk, swirl on the cakes and scatter with the reserved biscuit crumbs.
Why the Method Works
Butter, sugar, eggs, flour, biscuits: five things and about forty-five minutes. The only job that needs care is crushing the biscuits.
Put them in a bag and bash with a rolling pin until they are the size of small gravel, not dust. Chunks stay crunchy at the edges, while dust turns the sponge grey. Keep a handful back for the topping. The same biscuits that flavour the batter finish the buttercream.
Beat the butter and sugar until pale, add the eggs one at a time and fold in the flour with the milk and vanilla. The batter should drop easily off a spoon.
Fold in 80 g of the crushed biscuits, fill the cases two-thirds full and bake at 180°C for 20 minutes. If your oven runs hot, check at 16 minutes. Cool the cakes, then swirl on the buttercream and scatter with the biscuit crumbs. Press half a biscuit into the top of each swirl for a finish that tells people what is inside.
