Rub the cold butter into the flour and sugar with your fingertips until the mixture looks like fine breadcrumbs. Stir in the egg yolk and enough water to bring the dough together, then shape into a flat disc, wrap and chill for 30 minutes.

Heat the oven to 190°C / 375°F (170°C / 340°F fan). Roll out the pastry on a floured surface to about 3 mm thick and use it to line a 23 cm loose-bottomed tart tin, pressing it into the corners.

Prick the base with a fork, line with baking paper and fill with baking beans. Bake for 15 minutes, remove the paper and beans and bake for 5 minutes more until pale golden.

Reduce the oven to 180°C / 350°F (160°C / 320°F fan). Spread the jam over the base of the pastry case.

Melt the 60 g of butter with the golden syrup and sugar in a saucepan over low heat, stirring until smooth. Take off the heat and fold in the cornflakes until they are evenly coated.

Spoon the cornflake mixture over the jam and spread it evenly to the edge of the pastry.

Bake for 20 minutes until the topping is golden and crisp. Cool in the tin for 15 minutes before removing and slicing.
