Don't Make These Mistakes

Buy fresh or pasteurised crab meat rather than the shelf-stable tinned kind, which is often saltier and wetter.

Squeeze the crab in a clean cloth if it is wet, so that the filling holds together.

Keep the avocado whole until just before serving to avoid browning.

  1. Pick through the crab meat with your fingers and remove any pieces of shell. Drain off any liquid.

  2. Mix the yogurt, mayonnaise, lemon juice, celery, chives, paprika and pepper in a bowl. Fold in the crab gently so the lumps stay whole.

  3. Cover and chill for 10 minutes.

  4. Pile the crab mixture into the avocado halves and sprinkle with extra chives and paprika. Serve at once.

Why It Works

Crab needs very little. It is sweet and delicate, and a creamy dressing, lemon and a few crisp things for crunch are all it asks, which makes this a lunch for two guests, or for you on a day that deserves it.

Lump crab meat gives the best texture, in large flakes rather than shreds. Pick through it gently for any bits of shell, then fold it with Greek yogurt and a little light mayonnaise, celery, chives and lemon, using a light hand so the lumps stay whole. A pinch of smoked paprika adds colour. Fold, do not stir, or the crab breaks into mush. The avocado is the bowl, and its buttery flesh is a good partner for the crab.

Chill the filling for ten minutes before you stuff the avocados. Fresh crab keeps its sweetness cold. Squeeze a little lemon over each one before serving. Serve with a few slices of cucumber on the side.

Leftovers, Reheating and Keeping

Best eaten straight away. The crab mixture keeps in the fridge for 1 day; stuff the avocados fresh.
