  2. Put a cube of brie in each shell, followed by a teaspoon of cranberry sauce and a pecan half.

  3. Bake for 8 minutes until the brie has softened. Scatter with the rosemary and serve warm.

A Few Pointers

  • Do not overfill the shells; the cheese spreads as it melts.
  • Use cranberry sauce with whole berries for the best texture.
  • Serve soon after baking.

Some Background

The common way this goes wrong is a soggy shell, and the fix is to bake the filo cups first. Filled straight from the pack, they soak up the cheese and the sauce and turn chewy. A few minutes empty in the oven dry them and give you a crisp base that stays crunchy under the filling.

Brie is the right cheese for the job: it melts quickly into a creamy centre, and its rind is mild enough to eat. Cut it into small cubes, about 1 cm, so one cube fits in each shell. A teaspoon of cranberry sauce adds sharp sweetness, which cuts through the richness of the cheese, and a pecan half on top gives crunch.

Bake until the brie is soft and just starting to ooze. That takes about 8 minutes at 190°C / 375°F. Finish with a sprig of fresh rosemary or thyme for a bit of colour. Serve them warm, on a platter, within minutes of leaving the oven, because they lose their crispness as they cool.
