How to Make Creamy Tuscan Salmon

  1. Pat the salmon dry and season with salt, pepper and the paprika.

  2. Heat the oil in a large, deep frying pan over medium-high heat. Add the salmon skin side down and cook for 4 to 5 minutes, until the skin is crisp, then turn and cook for 2 minutes. Lift onto a plate.

  3. Reduce the heat to medium. Melt the butter in the same pan, add the garlic and sun-dried tomatoes and cook for 1 minute.

  4. Pour in the stock and let it bubble for 2 minutes, scraping up the browned bits. Stir in the cream, Parmesan and Italian herbs and simmer for 3 minutes, until the sauce coats the back of a spoon.

  5. Add the spinach in handfuls and stir for 1 to 2 minutes, until wilted. Stir in the lemon juice and season to taste.

  6. Return the salmon to the pan, skin side up, and warm in the sauce for 2 minutes. Scatter with basil and serve with the sauce spooned over.

  • Start the salmon skin side down in a hot pan and leave it alone. The skin releases from the pan when it is crisp, and moving it too soon tears it.
  • Do not overcook the fish. It should be just opaque, with the centre a little translucent, and it will finish cooking in the hot sauce.
  • Taste the sauce before adding salt. The sun-dried tomatoes, stock and Parmesan are already salty.

Common Substitutions & Variations

  • Double cream won't whip if you swap it, but for the cooking itself, full-fat crème fraîche or a lower-fat single cream works in its place.
  • An eighth of a teaspoon of garlic powder per clove is the usual stand-in when you are out of fresh garlic — it will not caramelise the same way, but it carries the flavour.
  • Vegetable stock in place of the chicken stock makes this meat-free without changing the method, if that is what you need.
